Bruno began his career at the age of 15 working in pastry shops and hotels in Paris and the south of France including Ladurée, famous for its’ French macarons. In 1989 he joined The Ritz in Paris where he spent five years perfecting his skills as Sous Chef. The Ritz-Carlton Hotel Company recruited Bruno in 1994 when he joined The Ritz-Carlton, Boston as Executive Pastry Chef. In November 1999 he opened Café Vanille on Beacon Hill introducing the best of a traditional French patisserie and boulangerie to Boston. Over the next 15 years he expanded his business to Café Vanille shops in Chestnut Hill, MA and Sharon, MA being recognized with five Best of Boston awards from Boston Magazine. Bruno lives in Boston with his wife, Barbara, who he met while working at The Ritz-Carlton, Boston.
